Welcome and Opening remarks by DECOR2024 co-chairs
(Dr. Hdr. Frederic Andres, Prof. Farshad Fotouhi, Prof. George Ghinea, Prof. Steve Tanimoto)
9:10 – 10:00 am CET
Keynote I:
"Food Computing for Nutrition and Health", Dr. Shuqiang Jiang

Abstract: Food determines the quality of life, it is not only
                  essential for health, but also
an important source of personal enjoyment. Food computing applies computational
approaches for acquiring and analyzing heterogeneous food data from disparate sources
for recognition, correlation, retrieval, recommendation, and monitoring to improve human
health and understanding the culinary culture etc. This talk will first introduce the food
computing group in Institute of Computing Technology, Chinese Academy of Sciences,
and then present several research progresses including food image recognition, food
knowledge graph, multi-modal food question answering, food recommendation and
nutrition analysis, then some application examples such as nutrition analysis and health
management will be introduced.  Finally, we will discuss futur prospects of food
computing research.

Bio: Shuqiang Jiang (SM’08) is a professor with the Institute of Computing Technology(ICT),
Chinese Academy of Sciences(CAS) and a professor in University of CAS. He is also
with the Key Laboratory of Intelligent Information Processing, CAS. His research interests
include multimedia analysis and multimodal intelligence. He leads the food computing
research group in ICT, CAS. He has authored or coauthored more than 200 papers on
the related research topics. He was supported by National Science Fund for
Distinguished Young Scholars in 2021. He won the CAS International Cooperation Award
for Young Scientists, the CCF Award of Science and Technology, Wu Wenjun Natural
Science Award for Artificial Intelligence, CSIG Natural Science Award, and Beijing
Science and Technology Progress Award. He is the Associate Editor of ACM ToMM, vice
Chair of IEEE CASS Beijing Chapter, vice Chair of ACM SIGMM China chapter. He has
served as an organization member of more than 20 academic conferences, including the
general chair of ICIMCS 2015, program chair of ICIMCS2010, PCM2017, ACM

Keynote II: "Data-Driven Food Innovations and Challenges" Dr. Xiaohui Cui

Abstract: In the evolving landscape of the food industry, the integration of data-driven technologies has ushered in a new era of innovation and efficiency. This report delves into how artificial intelligence (AI) and big data are revolutionizing food production, safety, and consumer engagement. We explore cutting-edge applications such as AI in flavor development, data driven food quality control and blockchain for food traceability, highlighting how these technologies enhance the quality and safety of food products. However, the adoption of these innovations is not without challenges. The report identifies key hurdles such as data scarcity, issues with data integrity, and the complexity of distinguishing authentic data from falsified records. It emphasizes the importance of developing robust data collection methods, reliable verification processes, and fostering a culture of cross-departmental collaboration to overcome these obstacles.
Bio: Dr. Xiaohui Cui, Senior Professor at the School of Cyber Science at Wuhan University, China. He also holds a distinguished professorship at the Future Food Engineering Center of Jiangnan University and leads the Food Safety Blockchain Alliance. As the Chief Scientist for the national research and development program on "Key Technologies in Food Safety Big Data," Professor Cui contributes significantly to advancements in food safety in China food industry. He is also a member of the Ministry of Education's Software Engineering Teaching Guidance Committee. Professor Cui’s research interests include big data, swarm intelligence, blockchain, food computing, and social computing.
